About the instructor
I’m Margaret Roche, a registered dietitian with a master’s in clinical nutrition. I’m board certified in gerontological nutrition, a specialist in diabetes, and a Fellow of the Academy of Nutrition and Dietetics.
Since it was first introduced, I have been studying and mastering IDDSI. I have trained thousands on IDDSI standards and implementation.
For over thirty years, I have worked with health care menus and helped dietitians and dietary managers provide optional nutrition for those they care for. I’ve made it my goal to help food service managers and consultant dietitians feel confident with these standards.
