Taste charts identify taste trends for 2021 with relevance to senior living and healthcare menus

Kerry, the taste and nutrition company has released its annual Taste Charts for 2021.  They identify the flavors and ingredients that consumers are looking for. Analyzing sales performance and consumer trends along with their own artificial intelligence, Kerry’s culinary and beverage experts predict taste for the coming year.  This is Kerry’s proprietary view into the flavor and ingredients that shape the taste market across sweet, beverage, savory and salty snack categories.  

The pandemic brought a return to familiar and nostalgic tastes and this trend is expected to continue over the coming year as people seek comfort from their food and beverages.  Kerry also identifies the tastes that are Up & Coming and Emerging and can be considered when planning for novel menu items.

We can glean some ideas for senior living and healthcare menu planning from the Kerry Taste Charts. It is especially helpful to see trends in terms of Mainstream, Key, Up & Coming, and Emerging.  For example, in the sweet category, Chocolate and Cinnamon are mainstream flavors where Up & Coming flavors such as Blood Orange or Rosemary can be used when we want to be innovative and build some excitement on the menu.
